Cooking Ideas

Awhile ago I bought two whole chickens on sale, and today I decided to cook one up finally.

I have the chicken going in a pot with some carrots, celery, and onion along with basil, oregano, and garlic. This will make a great broth to freeze. 

Now, I need to cook with the meat. I am thinking of splitting it up and making chicken enchiladas tonight for dinner. 

I could also make chicken and rice, chicken noodle soup, chicken salad. Any other ideas for using this chicken later this week?
